Oh, sweet naps.

Today I am unmotivated. We have my step-daughter every other week. When she is here, ohh how the days fly by. She is four, which means she has the energy of 100 Energizer Bunnies and little regard for the fact that adults do not. We find lots of things to fill our time from playground and walks to painting and games. However, when she’s at her moms’, boy this house is quiet!! By 9am I can have the laundry and dishes done (or started!), dinner in the crockpot, and house tidied… What to do with the rest of the day? I’ve been dabbling with adding a Virtual Assistant program to our existing company, but havn’t gotten it off the ground yet. I worked in finance for the last six years and after relocating for A’s job we decided I would not go back to work full time. While it’s obviously enjoyable to be home (can I get a hallelujah for unending vacay?!), I find it difficult to make myself sit down and focus on working. I had been so accustomed to going to the office 40 plus hours a week that the “being my own boss” and “making my own hours” thing has been quite a challenge for me. We have art above our bed that says “Stay In Bed…” and it has become a joke between A and I that I take this sign a little too literally. What can I say, having time for daily naps has been a much relished perk to this stay-at-home thing! So, needless to say, after three months at home, I have not QUITE found the balance yet. On the bright side, I have had LOTS of time to try out many a Pinterest recipe, much to the chagrin of my waistline. In the crockpot as we speak is a twist on a traditional Goulash. I made it a few weeks back and it was a hit! We are a pasta loving family, and this hit the spot. I found the recipe here – http://foodwhine.com/2012/02/crockpot-goulash.html – but copied the information to the post for easy reference. I used ground beef and added a little a lot more sour cream. DELISH and EASY! Enjoy, and wish me luck on this not-as-many-naps thing. 🙂


Crockpot Goulash
Adapted from Canadian Living: The Slow Cooker Collection (Smoky Pork Stew)
1 large onion, diced
2 cloves garlic, crushed
2 lb boneless pork shoulder blade roast, trimmed and cut into 1″ cubes
1/2 cup salsa
2 tbsp packed brown sugar
2 tbsp worcestershire sauce
1 tbsp smoked or regular paprika (I prefer smoked)
1 tsp dried oregano
1/2 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper
3 tbsp all-purpose flour
2 tbsp sour cream

Place all ingredients except for flour and sour cream in the crockpot and stir together. Cover and cook on low heat for 6-7 hours, until meat is tender. Skim off any fat from the top. In a small bowl, combine flour and 1/4 cup of cold water. Move the meat out of the way and whisk the flour mixture into the sauce. Stir well and cook on high heat until the sauce thickens, about 10-15 minutes. Stir in sour cream. Serve over pasta or cooked potatoes.”
